Oyster Little Bourke - Brasserie and Bar

The original brasseries of Europe were all about relaxed sophistication - about the bar as much as the dining area, about meeting friends or popping in alone for a drink. Oyster Little Bourke borrows many of those unique flavours - but the three friends who created Oyster Little Bourke have made the word brasserie, very much about Melbourne.

One of the three partners, Joseph Vargetto, trained under Italy's Gaultiero Marchesi and back in town under Philippe Mouchel of Paul Bocuse fame - he was even named by Antonio Carluccio as Australia's premier risotto chef! It's called Oyster - but it's modern Euro menu, isn't limited to seafood - there's even a separate organic steaks list. And the stunning, room length 'Front Bar' has it's own menu, but also features a mouth watering choice of Oysters, that lures casual diners.

Oyster Little Bourke is located right in the centre of the 'theatre precinct', nestled behind the Princess Theatre - so the service times and menus are very flexible, adding to the welcoming, European feel. Joseph's two partners cover anything you ever wanted to know about wine - Manager Luke stringer was awarded the 'service excellence' gong in the 07 AGFG, but most know him as the outgoing and welcoming face of Ezard and also from his time in Noosa at Berardo's. Frank Wilden makes up the trio, and his life is all about wine, but he's also played an instrumental role behind the scenes - owning various Victorian and Sydney restaurants, developing food events and hospitality strategies and as a government and corporate advisor - so Oyster Little Bourke really couldn't be better connected!

Joseph Vargetto And as for the various areas - When the floor to ceiling French doors swing open, the bar area leads casually out towards the sidewalk seating space on Little Bourke. Back indoors and beyond the bar, there's the dining room, with its huge mirrors covered in wine related scrawls and it's generous banquettes. It is comfortable, it is relaxed, you are at ease and how you enjoy Oyster Little Bourke, simply depends on the day…
